Alright, talked to my buddy this morning that suggested an Irish ale. He is cool with whatever as long as it isnt overly bitter and is RED. Here is what I mocked up as a hybrid american red/pale ale with hops I have on hand. Probably use a clean yeast for this. Any suggestions on recipe or yeast are welcomed. The main goal here is a red beer.

Batch Size: 6.5 gallons (ending kettle volume)
Efficiency: 77% (ending kettle)

STATS:
Original Gravity: 1.063
Final Gravity: 1.016
ABV (standard): 6.19%
IBU (tinseth): 37.9
SRM (morey): 16.1

FERMENTABLES:
11 lb - United Kingdom - Maris Otter Pale (76.5%)
1 lb - American - Munich - Light 10L (7%)
1 lb - American - Caramel / Crystal 40L (7%)
0.5 lb - American - Victory (3.5%)
0.5 lb - American - Caramel / Crystal 120L (3.5%)
6 oz - Belgian - Special B (2.6%)

HOPS:
7 g - Columbus, Type: Pellet, AA: 15, Use: Boil for 60 min, IBU: 11.01
0.5 oz - Columbus, Type: Pellet, AA: 15, Use: Boil for 15 min, IBU: 11.07
0.5 oz - Citra, Type: Pellet, AA: 11, Use: Boil for 15 min, IBU: 8.11

We just need to cover our tracks around 2pm and he'll never even find out. Man, how about that weather? There's so much snow, the snow is tired of snow and trying to drive in the snow when it's so snowy is like omg.

What should I do with these two ester bombs I made with my fancy new buckets that are terrible at thermal conduction?

Dump?

Donate to the food bank?

Set house on fire?

Oh, by the way.. thanks a lot. Had a dream about brewing a hoppy red last night. Don't think I've ever had beer dreams until now. Your fault.


I regularly have brewing dreams - mostly during periods when I'm not brewing. They are usually nightmares, though. Ie...cooling the beer in an ice bath in the sink, and wife starts filling the pot with water to the point of overflowing, and starts using it to rinse dishes in; mash completed only to realize I have no kettle or propane; no yeast; I forget what I'm doing, and dream somehow transforms into me throwing random **** into the boil like steaks, sticks,...

I wake up panicked! Sheer panic! [emoji79][emoji88]. Is this normal?

Well... temp was fine according to my Brewing SOP. I talked about it with @SciGavence C and we both seemed to agree that the thermal conductivity of the plastic is probably far less than that of the glass (I had this nagging suspicion when I started using them and proved those thoughts were correct in a controlled environment), rendering my previous temp control procedure less than effective. Couple that with the high OG and it was bound to happen.

So... yes. That's my excuse and I'm sticking to it.

Also, no... I have like 5 friends and they can all afford beer. I used to have more friends, but 5 is about all I can handle IRL at this point. Everyone else I just stopped answering when they called and the problem sorted itself out eventually.

Let it ride. Higher gravity beers naturally make the yeast produce more esters. They can work themselves out with time if you didnt completely funk your beer up. Unless a beer is completely undrinkable in the fermenter, i bottle it and give it a chance. You might be surprised, may turn out meh.

Wait longer. Give the yeast a chance to clean up their mess.

Let it ride. Higher gravity beers naturally make the yeast produce more esters. They can work themselves out with time if you didnt completely funk your beer up. Unless a beer is completely undrinkable in the fermenter, i bottle it and give it a chance. You might be surprised, may turn out meh.

Well it's in the keg now... should I bottle all of them off of there and keep at room temp? Seems like a ****ty plan for the DIPA. Or I guess I could just unhook the keg and set the thing off to the side for a while.

No, he's the one that got me hooked on it. Some guy from the company that speaks really bad English sent me a letter saying I won a lifetime supply. Haven't seen one oz. of that supply yet. Freakin out man.

One of the funniest moments I ever had at a client was at a scrap metal recycling facility that had a truck driver from one of the former Soviet republics passing through delivering a truck and then heading to ar-kansas. After the third or fourth time of him saying it and them completely clueless to what he was saying, I explained it to them. lol

That one can was supposed to last you a lifetime. Now I guess I gotta come up there and push you into traffic as not to void the warranty.

We never switched over to metric timekeeping. The c stands for “Caw”, referring to how many times a majestic eagle has flown overhead and cawed that day. Sometimes the eagles are feeling sluggish, so the show could be on after either the 7th or 8th caw.
