Funny you say that. I'm just about to price out new countertops for behind my bar. I have old formica now. It really isn't bad, or it wasn't until I ruined a spot with starsan. So, now I want some granite back there.
 
Definitely do it! There are lots of good examples of both 100% brett beers (no sacc) and brett + sacc beers. A brett saison is a good place to start.


I love a saison that has Brett in the secondary- not over the top sour but tart, refreshing with a whole lot of horse funk

Also, It depends on your pipeline.

I have a pipeline, but am kind of lost for what to do next. Divided halfway between a RIS and maybe doing a saison. Or maybe even a oatmeal stout.

Well, B1G football top teams look like garbage. Michigan looked good and Ohio State (the actual best team in the league) looked good, but both teams that played in the Big Ten title game are turning in embarrassing Bowl efforts.

I just had Urban Family's Brett Baby Cakes the other day. It wasn't tart, but it had the most horse funk I've had in a long time. It's pricy, but I picked it up in Texas, so someone here can probably hook up a trade.

How r u roasting? I have been messing around with a popcorn maker for the past year and can never seem to get a great end result- it is driving me nuts that I haven't perfected it yet I wonder if I just have a subpar popcorn popper

Lighting is a definitely an issue, how much smoke are you getting with your roaster?

Air popper or stir?
 
Air popper. I bought one of the recommended ones off the sweet Maria's list. I might need to steal my moms old air popper
