Definitely do it! There are lots of good examples of both 100% brett beers (no sacc) and brett + sacc beers. A brett saison is a good place to start.

I love a saison that has Brett in the secondary- not over the top sour but tart, refreshing with a whole lot of horse funk
I just had Urban Family's Brett Baby Cakes the other day. It wasn't tart, but it had the most horse funk I've had in a long time. It's pricy, but I picked it up in Texas, so someone here can probably hook up a trade.

How r u roasting? I have been messing around with a popcorn maker for the past year and can never seem to get a great end result- it is driving me nuts that I haven't perfected it yet I wonder if I just have a subpar popcorn popper
