I've not made a porter or a Dunkelweizen, smoked, imperial or otherwise. You always seem to have lots of great ideas for brews.

Man, I just wish I had more time to brew all of these sunzabeetches.

I've got a "to-brew" list a mile long.
 
Don't be alarmed everyone, I made it to work safe. There was just a little pile up that turned my commute from 20m-120m. Had a nice night last night after dropping off 3 boxes of "drinkable"-"probably diseased" beer for shipping. Waiting for people to gtfo of the conference room so I can get a coffee. Wish I knew who decided that was a good spot for a coffee maker. I'd throat punch them. With a hammer.

I did a mainly Mosaic 'IPA' with Belle Saison yeast... it was ok, but I over-bittered and masked all the nice yeast flavors.



Smoked porter keeps popping into my head, might just have to do it and then send wyobrewer a bunch. And add bourbon.

I did a chocolate smoked Porter. I'll check my recipe later and let you know how much smoked malt I used but from what I remember, a little goes a long way.
 
Where in Greece? Chania is great!

Still in early planning stages. We know we're flying in to Thessaloniki, then stopping briefly in Athens before hitting the islands. Specific island itinerary and inter-island travel is the next step. Definitely Santorini, but otherwise I'm pretty open.

Haven't heard of Chania. What's special there?

This is a real place, and the battle that took place here shaped history for centuries to come.
Athens is probably the most popular place to go, but IMO the best ruins to visit would be either the temple of Hephaestus or Erechtheum. They aren't nearly as crowded as the acropolis or the Parthenon but still just as magnificent to behold

Santorini, huh? Do any diving? They have some nice WWII area wrecks off the coast
 
It went really well, but to hire me the guy would have to renovate an extra floor of his building. It's a work in progress. I really don't mind it here, boss just needs to get with it. He ends up wasting more of my time than necessary. I may only get an hours worth of work a day but it is really irritating when I have to redraw something multiple times because he changes his mind or gave me the wrong info in the first place.
Oh wow. In a way I'd be curious to know why he was even interviewing though if he knew of the space issues. But I'm glad it is still kind of on track.
Working from home has really screwed me up. I go into the office and I get nothing done. I wonder how anyone does.
Jeez, an entire floor for you? It may be time for you to lose a little weight.
haha I'm big and I don't need an entire floor. Hell, I even fit in a cubicle comfortably.

Cherrywood smoked malt goes great in a smoked porter.
 
That was what I wanted to use, but I brewed on a whim and my shop only had peat malt.


Peat malt should never be sold anywhere, ever. Just my opinion, though. Never liked the flavor of it in beer. I used German rauch malt in my first smoked porter and it turned out great. The one I used cherrywood smoked in, I used 10oz in a 14.5lb grain bill. Seemed just about perfect for my tastes.

Sadly no. Snorkeling, but no scuba. Wife is not a big swimmer, but she'll do a little snorkeling.

Smoked beers are one style that I am not a fan of. I've had a couple that I like, but it's rare. I'd rather eat my BBQ than drink it.

The first smoked beer I ever had was Alaskan Smoked Porter. And I had no idea what to expect. I agree just not my style.

I think he didn't expect to find someone for a position like he is looking to fill, especially after just putting a tiny little add on craigslist. He's looking for someone to come in not as an architect, but to learn all the positions as well as go to job sites and take preliminary measurements, sketches, renderings. It would eventually turn into something of a department supervisor kind of position. Really interesting and probably the most down to Earth guy I've ever met. I'm hopeful, but won't get my hopes up too much. Luckily I'm not really in a position of urgency.

As far as the second floor goes and ignoring the fat jokes.. he's located in a really hip, rich area on a main street and has a packed office in a cool little building above a restaurant. The only available room is in a small meeting room. So, yeah.. thanks for asking.

Can finally get a coffee. Nobody has to die yet.

To be fair, my first joke was stinky, not fat.

Tell him you'll work out of the restaurant and negotiate for free meals as one of your benefits.

I used it in my last batch. I don't dislike it, but it's one of those things that should be used carefully. The flavor came across more earthy and phenolic than smoky.

Oh, now that you mention it that was the only other thing.. he would need one more CAD license. It will be quite an investment on his part if he decides to take me on. I'd take a pay cut for that job though.

Yall don't have a break room? Quit. Burn it down on your way out. Our old building had a coffee closet. Only breakroom was in the middle of the warehouse. Worst thing ever.

We've got a cafeteria in production. They've got a bring your own keurig deal. It's a disgusting mess from the kids leaving food and dishes everywhere. The engineering department uses the conference room for coffee/food.
 
I bring a french press in two travel mugs (need to get a thermos, but I'm too lazy and cheap) from home every day. I've only worked at one place that had a decent coffee setup. The rest either had terrible coffee or ******* coworkers that don't make a new pot after they steal it all.

It is on the island of Crete. Nice town, beautiful island. Not as touched by the economic downturn as other parts of the country.
