I was thinking on brewing, but I really don't want to be distracted from the amazing Nurse built pizza oven, that's gonna be crankin out homemade pizza...

I was also thinking about bringing some pizza dough.

Bertha will be cooking. I hope the oven will be ready but don't know if I can get it that hot so soon after finishing. And I haven't worked out a dough recipe yet. We'll see.

Didn't say it was hard. Said I haven't worked out the formula so I have the right hydration (50%? 55%? 60%?) fermentation time/temp, etc. so I make a good pizza.

If you put half that thought into your pizza "oven" perhaps 1) it'd be done by now, and 2) wouldn't be at risk of collapsing on itself.

The secret is not to let the dough rise too quickly. Use cold water boy!

I read somewhere that yeast develop better flavors if they're kept cooler vs warmer while fermenting. Don't remember where.

I think that's why Cape drops 25# blocks of ice in his fermenters.

And a cold ferment takes longer. Which is perfect for you since you don't have anywhere to cook pizza right now anyway.

I may or may not join you. I've got a lead on an old brake drum from a truck, if I can grab that this weekend I may put together a little blast forge.
I might need to borrow a couple rocks.

I'll have a few high temperature bricks left over you can use. They're good to >2000*F. If your forge gets hotter than that you'll really have something there.
