So I brewed an 11% imperial stout.
Been getting rave reviews across all beer drinkers I know.
I took some to LHBS and they are going to contact a local brewery, to get me in and brewing on their system while earning a percentage of the sales.

Sounds great no?
So how do I protect my self?
I mean I want to own the beer recipe and be able to brew it for me when I have the $ to do it commercially.
Is there anything I really need to watch out for when doing this?
If anyone has some experience or stories to help assist, please let me know!

Not speaking from experience, but:

I wouldn't worry about the recipe. It can't be protected and doesn't need to be protected.

The name will be trademarked by them, but you could probably get it transferred if you start your own brewery. You may need a contract to ensure your protection.

If you want to start a brewery, it almost sounds like you should look into contract brewing with this brewery. They sound open to it. I have no idea what costs are involved in starting this way, but I'm sure they're much lower than starting from scratch.
