I have a normal batch of 5 gallons that I make to keg. I tried half my normal recipe but actually dropped a full package of yeast into the carboy.

I added another gallon of cider but a question. What happens with too much yeast? I have half the regular sugar but all of the yeast.

To save the batch should I just go with my original recipe?

Do random taste tests and then throw in Potassium sorbate?

It is releasing C02 like crazy

Should I just Let the yeast do its job?

Sorry if this is amateur. I am a bit new at this.

All it means is that you have a pretty good amount of yeast in there. Panic not, it shouldn't effect the final product.
