adding zest to boil or secondary

I've done both, and the best success I've had is by splitting the total recipe amount and doing both in the same beer. An amazing version of brewdogs elvis juice

    Raspberry Porter.

Recipe on my blog www.thebigbeermanifesto.co.uk for blueberry and raspberry porter, it came out great!

In for more parsec jokes. Love the idea!

New England IPA "Northeast" style IPA

This looks great! It's very difficult to get honey malt in the UK but I've found a supplier in Ireland. This is going straight on the list after mosaic honey wheat!

    Extract brewing is FAKE brewing

Laughing at someone for extract brewing is like laughing at a fat person in the gym, it's just not on. If you're happy with the taste of your beer & getting fulfilment, good on you. You may also not be able to afford all grain kit. For those of us who prefer all grain, that's probably...

    Centennial as whirlpool addition

Hi jdonley, It's been described as 'super cascade' - definitely worth trying as a flavour/aroma hop in a pale ale! You'll see it used a lot in pales & IPAs YCH says 'lemony & floral'

    bottle capper wearing out?

Hi dom dom, My first capper wore out after a year or so - it might be worth looking at the bell, but if it looks structurally unsound it's probably just best to replace it for the money they cost. Last thing you want is to find you hadn't sealed bottles & they're flat and oxidised!

    Grapefruit IPA

I brewed a grapefruit IPA (clone of Brewdogs Elvis Juice), and it was amazing Heavy on Amarillo, and used grapefruit zest (none of the white bits!) both at the end of the boil & after fermentation via a vodka tincture.

I want to know the most off the wall beer ever brewed

I was shocked also by how much flavour it imparted. I used 1/4 of a cucumber in 10L and it was quite overpowering to begin with, settling after about 1 week in the keg. Write up in the blog below. I actually got quite a few good reviews of the beer & no bad reviews, and often served with a...

    Imperial Stout Recipe Critique

Thanks both Mredge, 50g doesn't sound much but in a 9L batch should work fine, its more or less what i usually use in stouts. The new things for me are the roasted & flaked barley... not sure if its needed? The remainder makes a great stout As for the sugar, can't mash enough to get that high...

    Bottle Tree/ FastRack

    I've got a fastrack, works a treat!

How can you improve your beer?

For me it would be fermentation temp. control. I have a chest freezer & temperature controller, but its constantly full of kegs and bottles! Likewise, I'd like to sort out a way of going from dry hopping to keg with no exposure to oxygen

    Imperial Stout Recipe Critique

    1 year brewing anniversary

Congrats! It's been about 18 months for me, and for my 2 year I plan to brew my first ever beer... with a few tweaks! It tasted so good at the time... but pretty awful in retrospect

    Has anyone seen these videos??

I often rinse sanitised gear with tap water, and never had an infected beer! I think it's too easy to get paranoid, it's a forgiving process To my shame I also take fewer gravity readings that I should

    Does pH matter for BIAB?

There is definitely benefit in controlling pH with BIAB; - I'm not convinced conversion occurs that quickly. Even so, you will leave it for an extended period and a high pH will extract tannins - Controlling mash pH ensures correct pH downstream I've brewed BIAB both controlling the pH and...

    Dolce de leche??

Did you give it a try mate?

    Knock Out Hop Addition

Likewise, I'll do at least 15 to 20 minutes, then begin to cool and remove at about 80c. I've also tried adding flameout hops at cooler temps but struggled to notice a difference (although it makes sense more oils would stay in solution). A brewing blog (I can't remember which) did an experiment...
