    Update: Still drinking this beer, with a little age it's gotten much better. a truly great wit. I'll brew it again in the spring for the summer for sure. Only thing i would change is potentially using a different Yeast(but that'd be for me to experiment with). Otherwise everything about it rocked.

    I used 25% Belgian White Wheat for mine with very little flaked. It turned out great so at least you have that for a reference . Ratio was 60% Pils 40% Wheat

    They're just very very carbonated. I would say boarderline gushers. Still, all i care about is how it tastes and the taste is great!

    Hope the pic quality turns out well. I think i slightly over-carbed the beer due to my usual under-carbing(i guess that's what i get for over carbing a Belgian strain). Still, this beer rocks and looks to me like the original i had. Tastes great too! Would recommend to people who prefer wit styles.

    Belgian recipe recommendation

    I have not yet. But i think i am going to coming up here pretty soon. It's starting to get warmer here in Texas and i think i want to make sure the yeast ferments at a higher temp for the next batch(since it's a Belgian). Just patiently waiting! Brewed a Wit i'm excited about in the meantime

    My fridge died right after i kegged this so i haven't been able to drink it yet, but the early taste tests were really promising. Very fruity, smooth and citrusy.

    About 3 Days in and my beer has been bubbling away. I used the Wyeast wit strain because my LHBS was out of thw white labs stuff. So far as noted above it smells great. Beer seems to be straw colored and i think after kegging will be nice and hazy. For graini used: 60% Belgium Pils 25%...

    Beer is fermenting away and smells very bready/spicy. Excited to see what it tastes like. I think i will keg it in 3 weeks let it sit another 2 weeks then drink it. Will post a Pic and notes when i can.

    Personally, i'd up the hops. I made a APA that was under hopped and tasted more like a blonde and i didn't really like it(because i like the hoppier type beers). IMO, Add 1 0Z more Centennial. .5 oz @ 45 and .5 @ 30.

    The Citrus hop thing is confusing. Normally those hops scream to me Pale Ale or IPA, not brown ale. I wonder if he confuses APA with Brown Ale

    I think around 151. I know for IPAs you typically mash at a lower temp, would mashing higher give it more of the body 'm looking for?

    It's funny you say that about the body, i think that would be the 1 critic i had of mine(lacking of overall body), the beer just seemed a bit on the dry side. And i thought the hops were spot on too. Next time i brew it i might just go with straight LME and then carapils and Carahell.
