I don't think I put way too much crystal malt in my beers early on, I just always put some in every beer, usually as the only specialty malt unless it was a dark beer. I started as an extract brewer and I'm pretty sure that is why. It is easy to get flavor out of crystal malt without mashing...
I agree that the old school Noble Hops won't work well for an IPA, but there a lot of cool new German hops that I've been wanting to play more with. That Stone beer was great, these new varieties can definitely work in an IPA.

I really like Windsor. Everyone else seems to prefer S04, but I'm not crazy about that. Just have to try them both and see what your preference is. Neither will ruin your beer.
