I'm brewing two recipes tomorrow...a Mild Ale and an Alt. Just realized I didn't get the plain light DME to make the starters with. I have a one pound bag of plain DARK DME that is extra and a 3 pound bag of plain AMBER that is extra (from other sessions). Can I use the dark DME to make the starter without any adverse effects on the brew, or should I just open the bag of amber and then store the rest somewhere sealed tight and dry?

You can use whatever you'd like to make a starter since they are small batches, but the smart money is on the lightest one.

I would just use the dark, because the prospect of trying to store opened DME seems more challenging than the remote possibility that such a small portion of extract would affect the taste of your batch
