OK, so this time I searched and have not asked this one. LOL. I am going to try my hand at a German Helles beer. It is calling for the liquid Wyeast 2308. I would have to order it and have it shipped with no guarantee it will be ok if it gets warm. And not having any luck with liquid yeast or starters so far, I am wondering if there is a dry substitute for this strain? Any input is welcomed.
 
From YEAST MASTER by David M Taylor Perma-Living it shows Diamond Lager from Lallemand to be a dry yeast equivalent. I cannot attest for any differences between the two, but have used Diamond Lager yeast in several brews and found it works well. Happy brewing!
 
2308 is the house strain at the brewery I work for. It has a very specific yeast flavor profile, there isn't really any replacing it.Yeasts like 34/70, Diamond, and Nova are far more clean, leaving little yeast character in the finished beer. I think the closest dry yeast would be S-23. Close only in that it also has a bit more character than many of the other lager stains. I haven't used S-189, so I can't comment on that strain.

That being said, you certainly don't have to use 2308. There are many good strains that will make a fine Hellesbier.
 
Thanks all who replied. Based on the recipe I am looking at I will need either two packs of the 2308 or a starter with one pack. I live just outside San Francisco and MoreBeer still has their shipping warehouse in Pittsburg CA. My question now becomes, would you all take a change on the liquid and try a starter? They usually get my orders to me in two to three days. Thoughts?

Buy it with the ice pack. You'll be fine.

The package will stay in the bay area and relatively cool.. you'll be fine like @ntempleton said. I have always had issues with packages being sent to the Tracy FedEx warehouse and sitting for days and ruining my yeasts just to be driven another 45 minutes to Lodi.
 
Diamond is the W-308 strain from Doemens, according to Andreas Krennmair. Here's the Reddit thread where he mentions it:


I guess the question is whether W2308 is equivalent to W-308.
 
If it were me, I would just order White Labs 838 Southern German Lager directly from White Labs. Where you are in San Francisco, you can get it delivered in 1-2 days and then ship with ice packs and insulated packaging. I order yeast directly from them and I am in Mass, get it in 2 days, I assume from the NC location and it's still super cold. Granted shipping can be costly, but I assume not as bad since you are in state.

WLP838 is a perfect yeast for a Helles as is their WLP860 Munich Helles yeast, which is the Augustiner strain.
