WLP820 Suggestions

Brewed a Marzen last Saturday, chilled the wort overnight to 55deg and pitched my starter Sunday after a good aeration. Contrary to pretty much everything I've read here, the WLP820 started fast. I turned the ferm chamber down to 52deg for much of the week then back to 55deg yesterday. This morning my TILT hydrometer reads that the beer is 55deg and my gravity is 1.020.....starting gravity was 1.055.

Soooo is this where things slow down or stop? I just turned the temp up to 62deg to try to keep it going. Is this the right course of action or should I go mid 60's?

Mid 60s is fine. But it might just be finished. High FG is another reason to hate WLP820.

Well a day at 65ish degrees and it’s at 1.012 so it’s likely finished or very nearly finished.
Will let it ride for at least another week and see what happens.

I assume you calibrated your Tilt? My FG is always about 0.002 higher withy my hydrometer reading than what my Tilt shows. I am fermenting under pressure. Word around here is to use the Tilt to measure when fermentation is done. I found that to be fairly true.

Yeah it is calibrated but I don’t use it as the Bible. For me it’s really just for determining stages of fermentation……mostly terminal gravity.
