Brewed a Marzen last Saturday, chilled the wort overnight to 55deg and pitched my starter Sunday after a good aeration. Contrary to pretty much everything I've read here, the WLP820 started fast. I turned the ferm chamber down to 52deg for much of the week then back to 55deg yesterday. This morning my TILT hydrometer reads that the beer is 55deg and my gravity is 1.020.....starting gravity was 1.055.
Soooo is this where things slow down or stop? I just turned the temp up to 62deg to try to keep it going. Is this the right course of action or should I go mid 60's?
