Who uses a portable tankless water heater to heat mash water

I have been using a portable propane tankless water heater to heat my mash water for about 10 years now. I originally had a Marey brand that worked perfectly. It would churn out 7 gallons at about 175° on the warmest setting, which would put me almost perfectly on my desired mash temperature.. That one gave up on life about a year ago and I replaced it with a higher capacity Chinese made Amazon unit. The problem I have with the newer unit is that it only cranks out about 2 gallons of water and then shut itself off to cool down. I believe there is probably a safety sensor that shuts the unit down before it reaches too high temperature. I was wondering if anybody else used a tankless water heater for heating their mash water and if y’all had a solution to bypass the safety sensor? Thanks!
 
I looked for a brand name on it but couldn’t find one. It looks identical to several others sold on Amazon under different names. It is a 10L per minute portable propane water heater. I tried to attach a picture but it is not uploading. Thanks!
