I’ve brewed a Summer Blonde. brewed on 1-28. Was to be FG 1.011, but today, day 6 it’s at 1.007 and seems to be stable. Will continue to take readings for the next few days. My question is. I am Leaving town for 2 weeks Sunday. Am I better off leaving it in the fermenter for an additional two weeks or going ahead and kegging it this Sunday? Sunday will be 10 days since brew day. Is that too soon to keg? If I kegged it, it would be ready to drink when I got back.

Keg it regardless. A keg is not a bottle, and is not going to break if there are a couple more points of fermentation remaining, which seems unlikely in any case. Rack to keg, hook up the gas at serving pressure, commence cold conditioning. When you return, you'll hopefully have something nice to pour for yourself as a welcome home gift.
