As the title says....

So what do you call a beer that's high ABV and one that's meant to be sipped?
 
Barleywine. Imperial Stout.

They take a very long time to be ready. Like 6+ months to a year or more.

Just listened to a pod cast with John Palmer talking about 'big beers' on it, and he basically said the reason for long agings is under pitching and poor aeration. With proper pitching and aeration you can actually have one ready in 2 to 3 weeks.

I've not tried it myself, so I have to Palmer's word for it. I don't know if anyone else here has tried.
