This is my current brewlog
#1 India Pale Ale
#2 Cranbeery - fruit pilsner beer
#3 Dark Thunder - Strong Scot Stout
#4 Gaelic Ale (clone Highland Brewery) - Amber Ale
#5 APA
#6 Vanilla Stout - Irish Stout
#7 Cream Ale

I was thinking about making "Beyond the Ordinary Bitter" from a Papazian book, or possibly doing an IPA with enormous hop additions. I am going to enter my APA, Vanilla Stout, and my next 2 brews in a homebrew competition in late March. I might remake my Vanilla Stout using real vanilla beans instead of the extract.

Just wanting your thoughts.
 
I just came across a Honey IPA, but it was all grain and I'm not ready for all that yet, so I will make an attempt at creating an extract recipe for it.

But i've never made a bitter

We were just discussing this! I have a Dead Guy clone in primary, as well as a hoppy APA. I decided on a California common, because it's been almost a year since I made one and my house temperatures are perfect for a steam beer. So, my answer is "make a steam beer".
 
Steam Beer huh? What temps do they need to ferment at? Correct me if I'm wrong but they are lager yeast at ale temps right?
 
I have Yoopers Dead Guy on keg now.. its good. I say go with Orfys Bodingtons Bitter it is the bombshizle! need to make me another 5 gallons as soon as my bulk grain buy comes in!

Yes, and they actually sell the "california lager yeast" strain. It's really good fermented at 62 or so. A bit fruity like an ale, but clean and crisp with the lager characteristics. It's a simple grain bill, and uses nothern brewer hops.
