2 quarts of jalapeños y verduras en escabeche - aka pickled jalapeños, onions and carrots in vinegar sauce. They are SO GOOD and they haven't even had 24 hours in the fridge yet!
Okay I know this won’t be everyone’s “cup of tea” but I’ve been craving it for awhile.
Liver and onions. Like steak it’s awful when overcooked.

Making a beer butt chicken tomorrow in the smoker. Going to empty a can and fill it with a homebrew for the season called OcktoberFist (blonde ale).

Brunch today basted egg, homemade sourdough toast, reheated b back rib, tomato and home fried potatoes.

Grabbed a burrito for lunch from my favorite local food truck. Carne asada, pollo, and camarón.
My wife made potato pancakes for dinner this evening. I like mine topped with cheese and sour cream. Not the healthiest of meals but oh so good.

Made pot roast last night for the first time since early spring. Two nice thick chuck roasts from Sam's Club, heavily seasoned, well-seared in bacon fat, and cooked with half a bottle of red wine and 6 cloves of garlic and a fat tablespoon of beef stock paste. We like ours simple. Ate with some of those homemade jalapeños in escabeche. So good!

We went out for seafood last night, so tonight I cooked some bone in pork chops at hubby’s request.
My wife and I decided to grab something out today before heading home to watch the baseball game. I had the carnitas salad. Loaded with carnitas and quite filling, especially for a salad. Enjoyed it with a wc dipa hopped with Nelson and Idaho 7.
Cooking up a base of finely chopped carrots, onion, garlic and red wine spiced with basil, thyme and oregano.
Gonna be a moose bolognese.

Beef and bean chili Friday and yesterday I made a small vat of guacamole from 8 avocados for a party.
Wow, we used to make those. Must be 20 yrs since.

Maybe jumping the gun on “cooking”, but I made up 13# of country sausage and 5# German bratwursts!
Going to fry up a little excess sausage, (too little for packaging) and add it to the 2 gallons of 3 bean chili I made yesterday. We will be eating chili tonight with my Nut Brown Ale!

No big deal, I didn’t make the cheddar nor the bread and butter pickles, but the bread is homemade sourdough with rye and whole wheat additions.
