My fancy new phone takes crappy pictures (or maybe it's just me), but this is my take on Iron Horse's Irish Death. Tastes delicious, nice and roasty, and with a 1.020 finish (which is what the recipe called for) slightly sweet, but the increased by .25oz CTZ I bittered it with counters it nicely. And dammit, I'm worth it.

One more beer while making pizza dough for dinner tomorrow night.
Back into the tent with my daughters and our four year old rescue mutt. She’s unsettled if she’s not with the majority of us when routines are broken. She’s right in between my legs curled up and happy.

I’m not a purist, by any means. I make beer. I make it in a fairly wide variety of styles, but I don’t pore over the BJCP guidelines prior to putting a recipe together.

I actually like this beer well enough to make it again. Maybe I’ll call it a “Session Pastry APA”.

And that's all I got to say about that.....

Side by side tasting. HB Irish Stout after downing a can of the real thing. Mine is a little heavier and more roast flavor. I also noticed that mine is quite a bit darker when held up to the light. Maybe I’m using too much roasted barley and/or the wrong technique. This batch is 10% roasted included in the mash. My newest version is still 10%, but cold steeped for 18 hours then added with 5 minutes left in the boil. I’m interested to see if there is a noticeable difference.
