I just throw in some honey, champagne yeast and nutrients. De-gas every day for a few days but don't really know if that does anything. This last batch I added 2lbs after 2 days of bubbling. It ended sweet at around 13%. It works. Maybe some day I'll get fancy.I have only done a handful of meads myself so I am far from an expert.
I used the "BatchBuildr" tool from meadmakr.com with the Fermaid K/DAP nutrient regime. I fermented completely dry and then backsweetened to around 1.010. I am really happy with how it turned out.
