Time to start figuring out what exactly I want to do with my traditional sours. I put a gallon in my whiskey barrel to see how that comes out (it's a one gallon barrel so should expedite the aging time on it.

Anyways, quite a unique, complex sour. I've never had anything quite like it, drank at room temp and carb'd with sodastream. It's pretty damn tasty.

Ask @Brizzo for some suggestions he’s a sour beer expert. There is also Dr Lambic on the sour beer blog. He’s opening a brewery near me in a couple months and I got a founding membership so I can’t wait to try his sours!

I know, I keep trying to get his offerings in FotHB. I have 5 gallons of traditional sour and it's just a matter of figuring out what flavors I want to impart. As far as aging is concerned it's done, except now I'll start racking to 1 gallon carboys to let it rest on fruits. I have so far a pluot and raspberry and this whiskey barrel aged sour I'm letting rest for a few more days anyways. Otherwise, it's another 2.5 gallons or so of unclaimed goodness. I'll probably reserve a gallon as-is.

On to the next one...

Another traditional sour, but this one was on pluots ... probably needs more time ... lets see ... verdict is yes. MAN it takes a long time to impart fruit flavors. Slightest hint or placebo, beats me. I might pull some from the raspberry sour; however, I anticipate the same results. They've only been on fruit for like 1.5-2 weeks now.

Edit: Correction, it finishes on the backend with some pluot subtleness. Very nice, pleasant, but not as fruit forward as I hoped. Then again, I figured with the sourness of the pluot it might be lost...perhaps it was. OR perhaps I need way more pluots.

Goldie and bear, I've seen my fair share of that. Another KBS

Everytime I go visit my nieces of the other coast it goes something like this...

me: What do you want to watch
them: Percy Jackson xxxxx or Big Hero 5
me: You have like a thousand other movies
them: Percy Jackson xxxxx or Big Hero 5
me: I heard you the first time, pick something different
them: What about Percy Jackson xxxxx or Big Hero 5
me: I need a drink

I am pretty sure this is my last drink of the day for better or worse

This is the raspberry sour, color is great, but I pulled some raspberry chunks in the transfer. There are some frozen bits that haven't thawed in the taking of this picture, but while writing this they've warmed up enough leaving a few raspberry berrie ball things (seeds?). Whatever.

Let see ... raspberry aromas POP ... raspberry colors DUH ... raspberry flavor subdued by sour but is there in the backend. Perhaps that's just how more traditional, complex sours are. @Brizzo would you agree?

Agree 100%. You get the fruits essence. You can always way up the fruit amounts too if you don’t feel like they are coming through. Like peach I will do 1-1.5lbs per gallon. I still owe you a box. And @PianoMan. And @scuturo and @RevKev. I’ll get to em

Did a coozie come with it..or did I forget to pack it?

Speaking of forgetting. Packing at 5am is no good. Forgot the hand held computer controller. Have to navigate the old fashion way..by each star/constellation.

Dig these Monks beers. Nice Roasty stout.

You sure you don't want to pick up a Ps4 so we can play Texas 4 Ever?

Here’s the problem. I have an xbox in the rec room. My oldest has a PS4 in his bedroom. So I need him to sleep over somewhere or the wife to take the kids to see the in-laws for a weekend and then we can booze and play. Personally I like the PS4 better but the XBox is more convenient for me. I got microbrewed in my head so one day we will get together. It would be easier if we were on the same coast!

Just downed a Founders Pale Joe I forgot about in a closet for a year. Still pretty strong coffee flavor! Not a bad beer.
