Seems a lil low for your style ABV LOL.... looks good though.

you use 1 or 2 packs of US - 05 dry? the reason i ask is that i was reading that 1 pack of dry can actually be under pitching.... ive always used 1 but got me to thinking.

One is more than enough for this type of beer.

For some of my SMaSH beers, I use half of a dry yeast packet. Fermentation is practically over by the 5th day and I'm kegging on day 9-10.

I miss New Orleans. We talked about going but couldn't swing it plus San Francisco in two weeks.

That sword doesn't look very sharp?

Probably not very sharp, but the angle was all wrong. He's swinging up in a scooping motion, but the blade is at a downward angle and his left hand is choked up way too high.

Lose a lot of leverage and control that way.
