Looking to soft crash this to ~50F when fermentation complete to dry hop the Kazbek hops. It's 27 hrs since first hit 1.014. There are occasional dips to 1.013. Last one 4 hrs ago. Just curious when do I declare victory and set Inkbird to 50? Conventional wisdom is that yeast clean up a bunch of by-products as they run out of sugars. I'm with Miraculix - I've never stopped a fermentation so early.

Unlikely it stalled at those temperatures. If you're in a huge rush, you might taste a sample, if the fermenter allows that without opening?

Im pretty sure it's actually done. But the potential of further clean up would make me wait a few days longer.
