I'll keep it short : Bubbles started to appear in my sanitized water pot (connected to fermenter with tubing) 1 hour after I was done chilling out my wort. And maybe ever before that as I wasnt watching before 1 hour. Could this possibly be bad ?
Oh, it was with Belle Saison. Rehydrated. Pitched in a +- 76F wort.

I don't think you have anything to worry about. A change in barometric pressure could cause bubbling. Belle Saison is a beast too. I personally love the one beer I made with it.

Only concern to have is how you will handle very quick drinking start.

I've had S-04 & WY3711 start visibly fermenting in some 3 hours! I think it's better for the beer if fermentation starts sooner than later. And keeping temps in range with that give a cleaner beer that get's done faster in my experiences.

Conclusion : Bottled today. 1.001 FG. For 7% ABV. Belle Saison is a beast.

Another update : I'm actually suprised at how good it was, considering it was my 2nd brew and that my mashing was something of a catastrophe that saw a loss of 18 degrees all in all, forcing me to add some boiling water at the middle of the process and conducting a mash-out that was an hybrid of a decoction and a mash out.

Not extremely fruity, but quite spicy. The pre-bottling sample had quite of an alcool-burn that completely disappeared three weeks after bottling. And obviously dry as (insert word of your choice).

OG : 1.054
FG : 1.001

Yep, 98% attenuation.
