I made a cream ale recently and when ready I'll split into 3 smaller secondary containers and plan to add fruit. Peaches, raspberries and blueberries, all fresh from the tree/vine! I tried raspberries once last year and they watered down the porter significantly. What tips do y'all have on adding fruit to make sure this doesn't happen? Thanks!

You could dehydrate the fruit a bit in a low oven, that will also serve to pasteurize the fruit. You may notice some flavor change, but it might not be much especially if you feel the trade off is watery beer.

I could be wrong, but I was always told it’s best to freeze fruit before adding it.
