The Vinosynth beers are both collabs w/ Oliver Winery in Bloomington, IN. As Snowrs mentioned, the Vinosynth White was a SR base beer, and they added/used (not sure how they were introduced) enough white wine grapes to the barrel that would equate it to about a gallon of wine, and then aged it in white wine barrels. This one was my favorite of the two. As mentioned above, was maybe slightly less sour and had a bit more clean funk, but really nice. In regard to the vinosynth red, I believe that base beer was the dantillon and had the same deal, but red grapes and red wine barrel. This one was good... but not as good as the white. The Viola is their base lambic aged in oak barrels w/ Fresh Viola flowers added per Andrea at Upland.
Disclaimer: I originally liked the Darksynth more than lightsynth, but changed my tune, and I am not as crazy about persimmon and Kiwi like everyone else. My faves have been SR, Peach, Blackberry, and Raspberry. I tell you that, to tell you that my palette might be odd, but hopefully this helps your decision making on reservations!
