I've been using 3787 as my goto for Saison, Belgian Pale and Dubbel and it works well by varying ferm temps for each respective beer.

Is there another strain you guys like that has this sort of versatility?
 
What is 1787? Do you mean 1762 or 3787?

3522 Belgian Ardennes works in pretty much every Belgian style. I'll use 1762 for Dark Strongs. 3787 is probably my favorite for low gravity Belgians.
 
I don't really have one go to strain.

I use 3787 a lot, followed by 1214 and 3522. The flavors are different so I appreciate that.

I use mostly 3711 for Saisons.
 
I was using 3787 for Tripels and 3711 for Saisons and this last year switched it up to using T 58 for Tripels and 3725 for Saisons.

The 3725 is a seasonal (supposedly from Fantome) and ferments fast and clean and does well fermenting in the mid 70's. T 58 is dry, which makes it easier in prepping, but doesn't have as unique a profile as the others. Still, it is clean with a little spiciness and does well fermenting in the 70's.

My LHBS just started carrying White Labs, so I might try some of those next.
