Hello,

I am trying a recipe for Sierra Nevada PA clone. The receipe is as follows:

Fermentables: 7.2 Pale Liquid Malt Extract
Grains: 1lb Crystal 40, 1lb Cara-pils/Dextrine
Hops: 1oz Perle (Bittering), 1oz Cascade (flavor), 1oz Cascade (aroma), 1oz Cascade (dry)
Yeast: Safale-05

My LHBS has everything on this list execpt the carapils. I am looking for a decent substitute that won't throw my beer off from turning out like Sierra Nevada Pale Ale. Here is a list of what my LHBS offers:

I am also not exactly sure what the "7.2" means in the extract? Is that pounds?
 
The SNPA clone from last year's BYO magazine where they interviewed Ken Grossman and the head brewer has 11 oz of C-60 in place of the C-40 and no carapils. Carapils isn't going to contribute any flavor, and I think that's plenty of crystal without it.
 
The extract already has carapils in it, so another pound on top of that is really overkill. I'd either just add another 1/2 lb of the extract to make up the gravity, or go with the recipe Chickypad mentioned.
 
Carapils is a very lightly kilned crystal malt. Crystal malts add body, mouthfeel and head retention. Since you're already using the crystal 40, I don't see why you need the Carapils.
