I bought a pack of German ale yeast, WY-3333. The description says it's a true top-cropping strain and will have a huge krausen. It's also unusually flocculant for a wheat beer yeast.
If I want to harvest this yeast and use it again, do I need to harvest from the krausen (sounds hard to do in a carboy), or can I just save the crap from the bottom of the fermenter like usual?
