Hello Everyone. My name is Zohreh (Zoey). I am a PhD student at Toronto Metropolitan University, studying yeasts that are involved in Kombucha production. I am interested to learn about practices/techniques used to control alcohol level in kombucha, so I am conducting a short interview (15-30 minutes). If your interested to share your ideas with me please let me know. Your help is greatly appreciated.

my understanding is oxygen concentration? this should be in the booch forum though? :mug:
