TMU student request for information about Kombucha

Hello Everyone. My name is Zohreh (Zoey). I am a PhD student at Toronto Metropolitan University, studying yeasts that are involved in Kombucha production. I am interested to learn about practices/techniques used to control alcohol level in kombucha, so I am conducting a short interview (15-30 minutes).
