So I have been using a swamp cooler to ferment and I have noticed that when the temp of the cooler will get up to 67-69 and then when I add the water bottle the temp will sometime drop all the way down to around 58 and slowly work its way back up during the day. I am gone from 730am-630pm to there is no one here to add more frozen water bottles so I am stuck with these fluctuating temps. Is this going to adversely affect the flavor of the beer? Its an American Wheat Beer.
 
That's a pretty large fluctuation. I would recommend a bigger bucket / more water will keep the temp steadier, due to the thermal stability of more water.
