found this recipe on an australian forum(much less active than thie one), just wondering what should be used as fementables. its a kit but doesnt suggest what sugar/malt to use. also of all the yeasts suggested any ideas which one to go for? the W-34/70 is the most expensive but does that mean its realy the best for this recipe? also noble styled hops is it better to boil in a cup of water for 15mins or put into wort boil for the last 15?

"It's a lager using what I perceive to be noble hops, so I'd say use hallertauer mittelfrueh, and a lager kit with a bit of colour... like a munich helles (munich lager). Should get you close. Use a lager yeast like S-189/, W-34/70, S-23 at around 8-12degC"

yeah its a clone of an aussie beer by James Squire called Sundown lager. one of the greatest beers i have ever tried. its not a real popular beer and they are just a small brewery, so i have not been able to fine any clone recipes bar this one
 
Judging from the questions that you are asking, I'm also guessing that this is your first brew. I'm not a lager expert, but I do know that Lagers require to ferment at ~50deg F (10C) and then require about a month Lagering period just at/above freezing. These requirements can make lager brewing difficult for new homebrewers.

I'm definitely not trying to put you off brewing your favorite beer, but would probably be a good idea to get a couple of ales under your belt to get a good understanding of what the process is like. If you want to go the ale route, I'm sure we can get you to a recipe that can approximate your fav beer, or we can help with the recipe if you want to do a Lager.

Anyway, more info on this beer will def be needed.
 
not quite a virgin but im still quite new :(

the first batch(and the only one that has come through to drinking stage yet) was a lager and was quite bad. the home brew guy said it would be fine despite all the recommendations to not do them in my climate. i have since put on 2 pales and an amber but i am starting to leave in primary for a while so they are yet to come through. temp shouldnt realy be a problem nor will leaving it in the fridge(just over freezing) for a month, i have already made enough room for my fermenter in there for cold crashing, even this aggrivates the missus some what.
more or less i want to see what impact temp has on lagers(as i know the first one was more or less appl cider) so i was going to try this lager and let it ferment in an ice bath to keep it down around 12-15 id say. was then debating on weather to let it sit and clear at room temp or continue with the ice bath for clearing in primary for 3 weeks. and then a quick cold crash and bottle. but if u recomend leaving in the fridge for a month that is also viable. but yeah i realy just want to see how a well made lager taistes as aposed to my first violation.

but still need a hand with the recipe plz guys
or other suggetions on my methods would alsop be appreciated
 
Couldn't find a whole lot of info about this beer out there, but I did find one thing:

In this news site (http://www.couriermail.com.au/lifestyle/food-wine/bewdy-its-beer-season/story-e6frer5f-1111118125807) they talk about the hops. They apparently use Galaxy/Summer Saaz/EKG to hop with. It sounds like they are probably using the Galaxy/EKG as the aroma and flavor hops, with the Summer Saaz as the bittering, but that is just a guess.

This is what I would do..... go to the recipes section of this site and grab a Helles recipe. This looks like a good one: https://www.homebrewtalk.com/f57/muenchner-helles-86844/

Then just adjust the hop schedule with Galaxy / Summer Saaz / EKG. You'll want to be around 20-30 IBU, but I could find nothing on the IBU for this beer. Go for 50% from your bittering addition and 20/20/10 from your late additions. You can use the recipe calculator at hopville.com to calculate IBU's for your hop additions.

Once you have formulated your recipe, throw it out on one of your Aussie homebrew forums and see if anyone wants to provide input. They may not have a recipe, but people love to provide input on other people's recipes.

If this turns out PM me, b/c I want some of those Galaxy hops. I can't find them here.

13.4% alpha acids are a little high for lagers though arnt they?

ok so ive come up with a recipe i think i might use. its alot more complex than the one i would have orriginally used but anyways. its also pretty hard to match products we get here in australia to the products listed on beercalculus.com but here goes. oh and i put my measurements in metric but swapped over to imperial for u guys so that might be why they are not whole numbers. this is for 6.1 gallons by the way

27% 2 3.27 Corn Sugar (Dextrose)
14% 1 1.64 Light Dry Malt Extract
14% 1 1.64 Corn Syrup

1oz @60 saaz
1oz @10 galaxy
1oz @10 EKG

Saflager S-23 Dry Yeast

og 1.054(is a bit higher than i would like)
fg 1.014(also a bit higher than i had hoped for)
colour 5° SRM / 11° EBC
bitterness 18ibu(tried to keep this a little lower)

and 5.3%a.b.v.(was looking for somewhere around 5-5.5 so this is good)

should i realy worry about og and fg being a little higher than expected? and i also cant find any online shops that stock ELDME. ill talk to the guy at shop tomorrow when i go to pick up the ingreadiants.

what do you guys think?
 
I think you might be over the top on the Munich LME. That may also be what is bringing your gravity up. It should be only be around 20% of your bill.
