Is it ok not to stabilize if no back sweeten is desired and just degass?

Yes. I almost never use sorbate in my finished wines as I don't sweeten them, and I don't like the taste of sorbate.

If the wine is done, as proven by hydrometer readings, it doesn't need to have sorbate added if there is no sweetening.
