Is it ok to split a kit in half if there is two can of extract?

Yes; of course, the final volume is half. This is always the case that you can split your batch into two. It is a great way to experiment. For example, with my Pilsner, I am going to split it into two batches - one stays as the Pilsner, the other I will add some mango to see what happens.
