I'm brewing this weekend and I want to try my first stout which will only be my 4th brew and would like a simple one that doesn't have like six different hops in it. Does anybody have a tried and true good recipe for this beginner??

Are you looking to make a dry stout, sweet stout, Imperial Stout??? Knowing more about exactly what style you are trying to achieve will help us to formulate a good recipe.

5 gallons

6 lbs dark DME
8 oz roasted (steeped)
1 lb crystal 80L (steeped)
.5 oz fuggles 60 minutes

yeast (wl irish ale if possible, but dry is fine)

Steep grains at 155F (or so) for 45 minutes remove grains (strain or pull bag)

Boil liquid

add hops

Add DME with 15 min left in boil.

The malt goes in at the end of the boil ? What does that do?

Adding malt extract near the end of the boil helps reduce unwanted flavor changes. If you boil the malt for the full 60 minutes there is a chance that some of the sugars in the malt could be converted into caramel. This causes flavor and color changes in the finished beer. (google maillard reaction). To prevent this, many extract brewers choose to add some or all of their malt extract late in the boil.
