I'm concerned that I may have under pitched. This is a brewers best belgian tripel kit beer that only came with one packet of S-33 so I went ahead and pitched what it came with. OG was 1.094 which was .008 higher than the kit estimated. Fermentation was vigorous within a short time and looked great for the first 18 or so hours. Ferm temp was a little high in the upper 70's. After 1-1/2 days it showed little sign of active fermentation but the airlock is still bubbling about once every 30 seconds. I haven't opened back up to take a new reading but I'm concerned I may need to repitch another packet of yeast. Has anyone had similar issues? Suggestions?

I haven't used it on a beer that strong but the times I've used S-33 it's fermented strong and fast. Let it ride for a bit longer because of the strength.

S-33 does indeed ferment quickly, but I do think you did probably underpitch. It may not have caused you any real problems, though. Without a gravity reading it's impossible to say. I wouldn't be surprised if it was finished since you were fermenting in the upper 70's. You might need a good amount of conditioning time since you fermented that warm....

I used S-33 2 months ago on an IPA and it did ferment that fast for me. Within 48 hours it had gone through most of the primary fermentation. It was the fastest, most vigorous fermentation I've seen from a dry yeast.

Excellent. I'll check next week after its had a little more time to finish. If the FG is too high I guess I can pitch another package to help it finish. Thanks for the input.
