So I just bought a new countertop RO system. It has brought my was down from 225 TDS to literally 0. I couldn’t be happier with it.

Question:
Should I use the RO water almost immediately after making it or let it sit for a few days.

As I understand it, pure RO water will absorb atmospheric CO2. CO2 in water will form carbonic acid. Albeit in very small amounts, this reduces the pH of the water into the 5.5ish range (estimated).

I plan on testing the pH of fresh vs settled RO water when my meter comes tomorrow.

Given the choice between the two, assuming a difference,which would you pick.
 
It doesn't matter. The pH is immaterial so you don't have to worry about it. What matters is the alkalinity and in your water it's 0 or near enough, and so you don't even have to test the pH.
 
^ listen to Yooper. The starting pH of your water is irrelevant. It is the pH of your mash that you are worried about and that is driven by the alkalinity of the water. That is the point of starting with RO, almost everything has been removed from the water, its a blank slate for you to work with.

What kind of counter top system did you get? I got a 4 stage 75 gallon per day RO/DI system for my fish tanks from Bulkreef Supply that I keep in the garage. Now my wife wants something for inside o_O
