I have an RO Buddie with the DI resin cartridge. It says do not drink the water that has been filtered with a DI resin cartridge.

Is this just because there's no minerals in it and if that's all a person drank it wouldn't be healthy with no minerals OR is there something inherently dangerous with the DI resin cartridge? Once I add my minerals back in for brewing everything should be all good, right?
 
It's a "Cover Our @ss" statement.

Deionized RO water (aka "RODI") is essentially the same as distilled water, and as long as the consumer is enjoying a reasonably well balanced diet there won't be an essential minerals deficit even with long term DI or RODI consumption.

Now, fwiw, I will say I do not like drinking RO water - and I don't even have a DI cartridge on my system. We enjoy our well water "as is", so my RO system is used exclusively for brewing...
