A sad night last night, emptied my first 5 gallons of beer into the street. A 5 gallon batch of porter which was my first all grain batch and the first batch that used washed yeast. I think it was too many firsts, it had been fermenting for 4 weeks in the primary and the taste test showed that it was sour, astringent and a little acetic tasting even. I didn't waste the time kegging it. I think I will soon be dumping 5 gallons of Caribou Slobber which is where I think the infection started as this was where the washed yeast came from. Live and learn.
 
you need to let stuff age out more. you never know until you do. at the very least bottle some of it and throw it in a closet for a few months.
