I always put in a 80% safety factor
Each to their own opinion - if it's rated at 40a continuous duty - then it's rated for 40a continuous duty and can be used in circuits using 40a continuous. The safety factors are already built in.

Easily done, as I do it all the time. In fact wanting to still do 5 gallon batches is why I went with stouts 20 gallon kettles. They are the same diameter as their smaller sized ones so I can keep enough grain bed depth. Their next size kettle above the 20 is a larger diameter and I would have to give up 5 gallon brews for the most part.
I am actually going with stout for all 3 vessels I think. I was truly impressed after looking them up.
