Meanwhile literally every pub in Melbourne is going from standard pub to "hey we have craft beer now, and colourful high stools, and our menu is all some sort of burger/bun/meat thing".

I love all of those things but ****, some character would be nice. At this point it's just a template.

I don't know why it annoys me so much. 5 years ago I loved these places but... there are so many and they are all exactly the same.

**** beer, steaks, roast of the day, chicken parma. We still have a lot of great live music venues with free bands, and decent "pub" food without being pretentious or expensive. Fortunately they are also getting good beer in now.

The place that triggered that post went from an irish pub to a craft beer bar template pub. I would've loved to have seen them keep an irish theme but update it. Something like, beef brisket irish stew instead of brisket burger. Irish soda bread and stout-braised pork sandwiches, and maybe a local guinness nitro clone.

That would make me consider visiting the pub, but instead it's the exact same as about 4 or 5 places in my neighbouring suburbs. I get that it's a tried and true formula and will probably work well for them, but it's still boring.

Yeah, that's a shame. Bringing good beer to classic pub food is the path. Not superficial craft beer layered on me-too trendy food.

Yeah we have dive places here doing that at a rapid clip. Huge banner hung out front "Now featuring 32 taps" plus the burgers now come with garlic aioli and romaine lettuce.
 
I have no vested interest in the secondary market value but sweet Jesus is Jjjuliusss good. I domed a growler of HF Double Citra and had a glass of HF Excursions 3 before I opened this can. Incredible. It's like you steeped Citra hops in tangerine juice.
And then forgot to strain the tangerine pulp.
No thanks.
