Im about to start a lager that i need a yeast starter for and it will be my first starter. I made my own stir plate and have a 2000ml erlenmeyer flask. I want to make the largest starter that I can. i read (thanks yooper) "for a 2000 ml use 200 grams of DME and add enough water to make 2000 ml of wort" so does this mean add 200g DME to the flask then fill with water to the 2000ml mark? this leaves little room for the air lock. I just dont want a huge mess for my SWMBO to clean up in the am. So my quick question is, will my 2000ml erlenmeyer flask with 200g dME and filled with water be ok or will it make a huge krausen mess? :mug:
 
I would consider doing (2) 1.5L starter steps. yeastcalc.com will help you figure it out. A 2L starter in a 2L flask is too much IMHO unless you are usinf FermCap or another anti-foaming control.

What yeast and what is the date on it?
What is your starting OG?

For a 1.5L starter use 150g of DME (Use 100g DME per liter of starter)
 
Just a quick tip, you really don't want to use an airlock on a yeast starter, instead you should just use a loose fitting piece of aluminum foil. If you use an airlock you will starve the yeast of oxygen and they will begin making alcohol as opposed to propagating more yeast cells.

Still trying to figure how stepping up works. Also every where I see people making yeast starters with liquid yeast. My yeast is dry and I guess I am suppose to rehydrate it before pitching it into the starter. What is the best way to go about this or is it just add water and let sit for a couple minutes?

You actually do not need to make a starter with dry yeast. Dry yeast packs have much higher cell counts than liquid yeast packs, and are ready to go as is.
 
So you think I will be ok just sprinkling the yeast in top of the chilled wart? Or do I need to do something else? It's OG is suppose to be 1.095 so I'm worried, my first lager and its big. BTW if I'm looking at a OG of 1.095 and 9.4% abv what's the FG suppose to be?
 
What you really need, then, with S-23 is 2-3 packets, and to rehydrate them in warm water for 15 minutes prior to pitching them into the wort.

One pack is nowhere near enough. I would pitch at least 3 at that OG.

You technically could make a starter, but 2L still wouldn't be big enough and it's just easier to pitch a couple extra packs instead.
