This week we picked our 2 Zestar trees to start our new season for cider. We pressed about 140 lbs of apples today to get 7 gallons or so of juice. We will boil this down to about 1 1/2 gallons of boiled cider that is used in the back sweetening of the hard cider later.

How do you feel about the Happy Valley press? I've been looking at the kit options, and part of me thinks something is missing from the frame to keep them square.
