it's brewday! and i'm making a clone of ruination IPA out of stone *drool*

problem is, the recipe doesn't say when to add the DME. it says:

-do partial mash stuff-
add Magnum hops, LME, and bring to boil.
add Irish Moss and boil for 60 minutes.
add the first addition of centennial hops at the end of the boil, let steep for 5 minutes.

so when should i add the DME?

6.6lbs LME
2.0lbs DME
1.0lb 2-row
1.0lb crystal (15)
1 tsp. Irish Moss
36.0 AAU Magnum Hops @ 60 mins
15.7 AAU Centennial Hops @ 5 mins
21.0 AAU Centennial Hops (dryhop)

Steep the two crushed grains in 3 gallons of water @ 149 for 30 mins.
Add Magnum hops, malt SYRUP, and bring to a boil.
Add Irish Moss and boil for 60 mins.
Add the first addition of Cent. hops at the end of the boil, let steep 5 mins.
 
I could be wrong but would'nt adding irish moss at 60 defeat the purpose?
 
this is coming straight out of Brew's "150 classic clone recipes"

also i planned on adding the irish moss about 15 mins before flame out, recipe be damned!
 
The recipes in that book always seem to be a little weird. yep, the irish moss goes in with 15 minutes left. For best results, you can rehydrate it in 1/4 cups water during the boil, and add it at 15 minutes. I've found that it works better if rehydrated first.

ok, about the recipe, I'm not good with doing the math with the AAUs. I'll have to rely on someone else with the math.

Edit- I guessed at it. My magnums are 14% AAU, and my centennials are 9.6%, so the amounts actually depend on what % you have for hops.

So, I come up with
2.5 ounces magnum at 60
1.5 ounces centennial at 5
2 ounces centennial at dryhopping

For IBUs of 46.6 in a 2.5 gallon boil with the extract all added at the beginning. I don't think it's quite enough, so I'd add the DME when you add the irish moss. That would give you 68 IBUs, though, so it's be much more bitter.

Do my hops amounts look like what you were thinking? I wouldn't do 1.5 ounces of centennial at 5 minutes- I'd spread those out a bit and add some at flame out.
 
great suggestions Yoop! im definitely going to go with that. at what point would i add the DME to decrease bitterness slightly?

I don't really know that- I have always either added it at the beginning, or with 15 minutes left. I don't know how the calculations for figuring it out with length of time and boil gravity.
