I brewed a peach wheat beer last sunday, no problems everything went ok, used wyeast british ale, fermentation started within 48 hours (no starter). It is now monday of the following week and i am still getting activity from my blow off tube.
The question is can i rack the beer to the secondary onto the peaches when there is still airlock activity? Or should i wait till activity stops and then rack onto the peaches?
thanks mike

so you cant rack to a secondary until the fermentation is complete?

Well, you can. Most people don't. Most people would wait until the FG has been reached, and the gravity has been stable at least three days. RAcking before FG has been reached can stall an active fermentation.

Since you're racking onto fruit, though, you may want to do it while the yeast is still somewhat active. I'd probably wait until fermentation slowed quite a bit, and then rack it onto the fruit.
