Question about Late Extract Addition

Good morning all,
My next batch I will be adding the LME and maybe DME late in the boil to keep the beer from darkening so much. I seriously think my beer has an off flavor because I cook(not scorched)the LME to long.
Questions are:
Should add LME AND DME late or just LME, When is the best time, Should I stop boil to add, When stopping boil do I need to stop timer and will it interrupt adding irish moss?????
