Question about Late Extract Addition

Good morning all,
My next batch I will be adding the LME and maybe DME late in the boil to keep the beer from darkening so much. I seriously think my beer has an off flavor because I cook(not scorched)the LME to long.
Questions are:
Should add LME AND DME late or just LME, When is the best time, Should I stop boil to add, When stopping boil do I need to stop timer and will it interrupt adding irish moss?????

It does tend to interrupt the boil, so I"d add it at flame out. I'd probably do most of the extract late, but definitely all of the LME late.
