I made a simple hefeweizen beer that I need to bottle this weekend. This site suggests about 4 vols of CO2 which is much higher than other styles. It then says I need 9 oz of corn sugar for 5.25gal. That seems like a lot! Should I trust this site or use a more normal amount (~5oz). I don't want to end up with bottle bombs.

Thanks!

Don't trust that site. At 4 volumes you won't get any beer in your glass. It would be all foam. Check out the link below. Bavarian Hefe at 3.6 volumes, 5.8 ounces corn sugar at 69°. Also consider you will only be bottling 4.75 gallons.

I have never gone over 3.4 volumes and still have to pour very carefully.

I went ahead and used my normal 5oz of corn sugar for 5 gallons. Bottled the Hef 2.5 weeks ago and they've been sitting in a closet at ~67F the entire time.

Opened up two bottles last night and there was little carbonation. I've used 5oz on my previous batches and always had plenty of carbonation. They tasted pretty good though, plenty of clove and a nice banana-ish finish. The hot alcohol flavors went away too.

Do they need to sit longer? I know it couldn't hurt, but I thought the carbonation would be complete by now.
