Ok, so Ive made spent grain bread.... and i decided i wanted to make pretzels too! anyone have a good recepie? Ive found tons on the interwebs, but they tend to be very different and very complicated.... anyone had success and want to share?

Check out the "Similar Threads" at the bottom of this page...

I too will be making some pretzels from a sourdough starter I have going.

Here is Kaiser's article on Brezels and here is menschmachine's for Bavarian Pretzels.

I think in order to make them reasonably right, some amount of 'complication' is required (i.e. the lye or baking soda step). I think Kaiser's article explains why.

I've played around with about 20 different recipes for pretzels and any of them that had coarsely milled grains in the dough came out horrible. I'd even tried cutting back to 1/4 cup of coase rye flour and it's gritty. I can't imagine spend grain being any better.

Stefin,

Talk to mike about his beer pretzels. They're not made with grain, but use homebrew as a portion of the water part of the ingredient. Maybe he will post the recipe for others.

i would think that if you made the traditional pretzel, then rolled it in spent grain, it would turn out great.
