Hi all, great forum.

About one year ago, I decided to start fermenting my own cider and attempted a 3 gallon batch. Everything progressed very slowly and I decided patience was the right virtue. Perhaps it was neglect... When I got around to checking the cider last September after a 10 month ferment, it was weak vinager, with a poor taste. Useless.

A second attempt resulted in a stuck fermentation at 1.04 gravity, starting at 1.06. I attempted a third batch, and voila! a batch ending at .99 gravity!

These have now been mixed, and racked to a clean carboy and keg under 30 psi.

Here's to what is hopefully a continuous flow of cider from now to the horizon!
 
Welcome to the forum. My first batch of cider did some weird things, like only clearing halfway, but was drinkable. I’m glad your third batch turned out good. And yes, patience is a key ingredient that can’t be purchased. Cheers, :mug:
