Hi all, great forum.
About one year ago, I decided to start fermenting my own cider and attempted a 3 gallon batch. Everything progressed very slowly and I decided patience was the right virtue. Perhaps it was neglect... When I got around to checking the cider last September after a 10 month ferment, it was weak vinager, with a poor taste. Useless.
A second attempt resulted in a stuck fermentation at 1.04 gravity, starting at 1.06. I attempted a third batch, and voila! a batch ending at .99 gravity!
These have now been mixed, and racked to a clean carboy and keg under 30 psi.
Here's to what is hopefully a continuous flow of cider from now to the horizon!
