Just ordered the Brickwarmer to brew for a family function coming up soon. Should have thought about this sooner but here I am scrambling to get it done in time. The recipe kit should arrive 12/9 and I need it ready by 1/3. I've read if people fermenting this for 2-3 weeks and being fine. I plan on kegging but I'm looking for some advice for a good schedule as far as how long I could ferment for and be able to get it carbed in time. The first and only beer I've kegged got much better after it stayed in the keg for a while but that was carbed around 30 psi for 2 days so I'd like to be able to get this one tasting good as soon as possible

Anyone have any input on this? The shipment ended up getting delayed and now I'm looking at about 2 weeks to ferment and 5 to carb. Also missed the gravity by a bit so I'm hoping this will still then out alright

As soon as you see a stable FG for 3 days go ahead and keg. Even when I keg at 10-12 PSI it is usually carbed up good enough in 5-7 days.

I brewed this last year on 11/13, bottled on 11/27, was drinking before Christmas. I haven't kegged yet, but I think you'll be fine. I used S04 in a low sixties basement. It's a good recipe.

Working on getting the carbonation right, but it's close. Tastes pretty good so should be ready to go by the weekend. Only problem is it doesn't pour well from the picnic tap. Had regulator at 17psi and even that was a slow pour. Tried through my kegerator faucets with better results but still not what it should be. Might be some sediment clogging the dip tube but I'm not sure

Well this turned into a huge disappointment. Got the dip tube cleared if debris and it started pouring fine, got the carbonation to be where I wanted, and a few taste testers were good on Friday.

But when I got it to my family event Saturday night it was a totally different beer. Tasted horrible and the next morning was completely undrinkable.

Any idea what could could have gone so wrong and changed it in a day? I'm just glad I decided to also bring what was left of my IPA, that keg emptied in no time

I assume it was sediment that also got racked from the carboy, it was clogged pretty bad and would barely pour. I bottled some and the rest went into the keg, so if those turn out okay it could be something contaminating the keg.
